Delicious Pepper, Tomato and Halloumi Frittata!

Since I had my daughter I am always looking for quick and easy meals that I can make for my husband and I after a full day of work or mummy duties!! Tonight I made this delicious frittata which took me no more than 15 minutes to make and went down a treat with my husband as well. 


It is full of protein and  healthy vegetable carbohydrates to keep you full and satisfied until the morning ladies! The best thing is you can change the ingredients and veggies you use each time so that it always tastes different.  Here’s how I made it:


INGREDIENTS (serves 3-4 people)

6 eggs, 1 red (or yellow) pepper and 1 stick of celery very finely chopped, a handful of chopped cherry tomatoes, 4 tablespoons of oat milk (or other milk of your choice), 1 tbsp rapeseed (vegetable oil), a pinch of sea salt and a sprinkle of fresh oregano.



  • Beat the eggs in a bowl and add the milk.
  • Lightly cook peppers, celery and tomatoes in the rapeseed oil in an oven proof frying pan.
  • Add sea salt and oregano. 
  • Add the egg to the vegetables on a low heat and spread the vegetables evenly throughout.
  • Cook on the hob for 3-4 minutes.
  • Put your frying pan (making sure it is oven proof!) under the grill until it is lightly brown and cooked throughout.
